During the harvest, the transport of the grapes from the vineyard to the winery is a problem. The high temperatures of the berries steeped in must cause uncontrolled fermentations and loss of aromatics, which can impact a wine’s quality. The protection and cooling of the harvested grapes is critical.
The addition of dry ice pellets to the harvested grapes aims to regulate the grape temperature and this way prevent possible oxidation. You will only need a box with dry ice pellets and to mix them with the grapes by the time they are placed in the transport recipients to the wine cellar. Grapes are therefore transported cold and are protected with carbon dioxide gaseous. The results of this process are very positive and profitable.
In case of mechanical harvesting, is also possible to previously inert and cool the collection tanks through the addition of dry ice pellets, in order to avoid possible oxidation due to the presence of oxygen and to control the temperature as well.
